Mix 2 ½ cups of flour with the white sugar, salt, butter cut into cubes, water, and knead until you get a homogeneous dough. Divide the dough into 2 portions and roll them out to form 2 dough circles. Line a pie dish with one of the dough circles, and cut out strips in the second dough. Set aside.
Step 2/2
Peel and slice the apples. Cook them over low heat for 5 to 10 minutes with the ginger, brown sugar, lemon juice, and cinnamon. Add 1 tbsp of flour and let it simmer. Evenly spread the apples in the pie dish, and use the dough strips to create a lattice pattern on the pie. Spread the beaten egg on the dough, and bake in the oven at 370 °F for 35 minutes, adding foil on top halfway through. Let cool 15 minutes before serving.
