Stand the pineapple upright in a baking dish, add onions and garlic on top. Cover everything in foil and bake for 3 1/2 hours until fully cooked.

After removing the bones, slice the ribs and fill a tortilla. Garnish with red cabbage, lime juice, coriander, and green salsa. Serve and enjoy!
