Season the ribeye steak with salt and pepper. Spread a generous layer of compound butter over the steak. Grill the ribeye along with rosemary and garlic until fully cooked.

In a bowl, mix tater tots with eggs. Spread the mixture evenly between two layers of parchment paper, pressing it flat.
Step 3/3
Place the cooked ribeye on top of the tater tots mixture. Add caramelized onions and crispy bacon on top of the steak. Carefully fold the edges of the tater tots mixture over the ribeye, encasing it completely. Fry in hot oil until the tater tots are golden brown and crispy. Top with sunny side up eggs and a sprinkle of chives. Enjoy!
